Companies at the Grocery Innovations Canada trade show, held in Toronto every year, showcased a large number of peanut- and gluten-free products. A rise in peanut and gluten allergies has led to an increase in awareness, especially in schools and grocery store. Celiac disease affects 1 in 133 Canadians, and as people become more aware of the disease, demand for suitable products has increased. Food manufacturers are also targeting those with autism.
