Family United by Celiac Disease
One in 133 people in the U.S. are gluten intolerant. The Amadeo family of Des Moines, Iowa, happens to have two members with celiac disease. Dad Gerard and brother Sam do not have celiac disease; Mom Lindsay and brother Joe do not. The solution at mealtimes? Lindsay simply cooks gluten-free meals for everyone. Dining out is sometimes difficult, but there are several restaurants that offer gluten-free meals. Like many people, Gerard Amadeo did not realize he was gluten intolerant until adulthood. Some estimate as high as 97% of people who have celiac disease do not know it, and a recent study in Finland shows that the disease is becoming more prevalent. Des Moines Register, June 25, 2008
