U.S. Diets Greatly Deficient

About 74% of U.S. citizens have an inadequate diet, and 16% have poor diets, according to the Center for Nutrition Policy and Promotion. In this study the top nutrient deficiency was fiber, which is found in whole grains, fruits, and vegetables and can affect GI function and other bodily systems. Long-chain omega-3 fats, found in fish, were second on the list. These molecules can reduce inflammation in Crohn’s patients. This article provides information about the top five deficiencies, including sources and serving sizes. Cortland Forum, November 17, 2008
