High-Fiber Foods See Improved Flavor

Manufacturers of high-fiber foods are working on adding more healthy fiber to their prepackaged products. In the past, more fiber has meant cardboard flavor, grittiness, and lack of flavor; however, companies are working on new techniques to shape, grind, and cook fiber to make the high-fiber products more palatable. Food scientists are also experimenting with new sources of fiber in an attempt to make the foods more appealing to consumers. The Wall Street Journal, August 19, 2009
